核桃肉桂捲 Walnuts Cinnamon Buns

材 料 A. Ingredients A.
中筋麵粉(盡量用高筋麵粉) All purpose flour - 300g
奶油 butter - 40g
酵母粉 Yeast - 6g
鹽巴 Salt - 1t
蛋 Egg - 1
牛奶 milk -190 cc
糖 sugar- 2T
材 料 B. Ingredients B.
紅糖 Brown sugar - 適量 moderate
肉桂粉 cinnamon powder
碎核桃 Walnuts (smash it) - 適量 moderate
葡萄乾 Raisins - 適量 moderate
蛋黃 Yolk - 1
奶油 butter - 20g
1. 把(材料A.)中的奶油打軟,再加入(材料A.)中全部材料混合拌成麵糰。
Stir the butter from (Ingredients A.) be soft,
then mix all the ingredients from (Ingredients A.) be the dough.

2. 放置1.5小時讓麵糰發酵。( 請在上方蓋上濕布)
Placed the dough for 1.5 hours for fermenting .(covered with a piece of damp cloth in the top )
3. 鋪上烘焙紙,均勻塗上(材料B.)中的奶油。
Covered with baking paper, spread the butter from (Ingredients B.) on evenly .
4. 把麵糰撖開約0.4公分厚,再鋪上紅糖、肉桂粉、碎核桃和葡萄乾。
Roll into a 0.4cm thin sheet, then sprinkle brown sugar, cinnamon, chopped walnuts and raisins over.
5. 捲成長條狀,再切成約2公分寬的小圓柱。
Roll it up be a strip, then cut it be a small cylinder which is ca. 2 cm wide.
6. 放置1小時讓麵糰第二次發酵。(請蓋上保鮮膜)
Placed dough for 1 hours for the second time fermenting.(cover with a piece of plastic wrap. )
7. 在每一個肉桂捲上抹上蛋黃液。
Spread the egg yolk evenly on every cinnamon buns.
8. 烤箱預熱到180度,再送進烤箱,約16分鐘。
Pre-heat oven to 180 degrees, bake for ca.16 mins.
9. 愛吃甜一點的大大,可在上方加上" 糖粉 + 水= 糖霜 "。(水一滴一滴慢慢加)
If YOU like to eat more sweet, you can put "sugar powder + water = frosting."
沒吃完的,可以放在冷凍裡
要食用前,直接放入烤箱中加熱即可。
If you can't finish it, just have to put into the freezer.
You just have to put the cinnamon buns into the oven before the serves.
