2010年春夏之際,前往常常在麵包坊聽到的國度-丹麥打混,2011年日曆一開張沒多久,正式踏入丹麥國度,成為丹麥的媳婦,一切一切對我都很新!這個夢想部落格,要寫下我們如何在廚房中混口飯吃、走過的餐廳美食分享...等等興趣的交流。In 2010, between summer and spring, I travelled to the country I had always heard about in our local bakery. In 2011, when we started using a new calendar, my stay in Denmark really became a part of my life. I am married to a Dane, and everything here is new and exciting! Miss dolphin is going to introduce the easy and fast dish N0.2.

2-3人份 (It serves 2 to 3)

材  料   Ingredients

 雞胸肉多寡依自己喜歡加 - Chicken breast - As much as you want
甜椒1個 - 1 bell Red Pepper
小黃瓜 1/2條  - 1/2 Cucumber
蕎麥麵 2 人份 - Soba for 2-3 persons
調 味 料 Seasoning

芝麻醬大匙 - 1 Big Teaspoon sesame paste
鹽巴0.5小匙 - 0.5 teaspoon salt
醋1.5大匙 - 1 Big Teaspoon Vinegar
辣椒醬1小匙 - 1 teaspoon chili sauce

糖0.5大匙 - 1 Big Teaspoon sugar
冷開水1大匙 - 1 Big Teaspoon cold water

 1. 用冷水拌勻芝麻醬。Use the cold water to paste.

 2. 加入其它剩餘的調味料入(1)中。Add and mix the rest seasoning into (1).

 3. 煮麵條。Cook the soba.

 4. 排盤、淋醬上菜。Dished up ,put the sauce on and serve it.

2-3人份 (It serves 2 to 3)

材  料   Ingredients

 火腿 多寡依自己喜歡加 - Ham - As much as you want
甜椒1個 - 1 bell Red Pepper
小黃瓜 1/2條  - 1/2 Cucumber
義大利麵 2 人份 - Pasta for 2-3 persons
豬肉漢堡排 Pork Burger meat - As much As You Like
雞蛋 Eggs - As much As You Like

調 味 料 Seasoning

紅帕斯托醬1.5大匙 - 1.5 big teaspoon pasto
鹽巴1小匙 - 1 teaspoon salt
羅勒1小匙 - 1 teaspoon Basil
黑胡椒1小匙 - 1 teaspoon Black Pepper





   1. 火腿、小黃瓜、甜椒皆切為小尺寸。
       Cut the ham, cucumber,and sweet pepper into small pieces.

 

   2. 煮麵條。Cook the pasta.


   3. 煎火腿、漢堡肉和荷包蛋。Fry the ham,Pork Burger meat  and sunny-side up eggs.
   4. 混合調味料、煎過的火腿、甜椒和小黃瓜。
       Mix all the seasoning,Fried ham, sweet pepper and cucumber.
   5. 拌入煮好的義大利麵條入(4)中,攪拌均勻。Add the pasta into (4) and mix it.
   6. 排盤上菜。Dished up and serve it.

 很簡單、快速吧!!

核桃肉桂捲 Walnuts Cinnamon Buns



海豚小姐今天將來介紹海豚家族Hiking 的好朋友
Miss dolphin is going to introduce our hiking friends today.


材  料 A.   Ingredients A.
中筋麵粉(盡量用高筋麵粉) All purpose flour - 300g
奶油 butter - 40g
酵母粉 Yeast - 6g
鹽巴 Salt - 1t
蛋 Egg - 1
牛奶 milk -190 cc
糖 sugar- 2T


材  料 B.   Ingredients B.
紅糖 Brown sugar - 適量 moderate
肉桂粉 cinnamon powder
碎核桃 Walnuts (smash it) - 適量 moderate
葡萄乾 Raisins - 適量 moderate
蛋黃 Yolk - 1
奶油 butter - 20g


1. 把(材料A.)中的奶油打軟,再加入(材料A.)中全部材料混合拌成麵糰。
   Stir the butter from (Ingredients A.) be soft,
   then mix all the ingredients from (Ingredients A.) be the dough.
2. 放置1.5小時讓麵糰發酵。( 請在上方蓋上濕布)
   Placed the dough for 1.5 hours for fermenting .(covered with a piece of damp cloth in the top )

3. 鋪上烘焙紙,均勻塗上(材料B.)中的奶油。
   Covered with baking paper, spread the butter from (Ingredients B.) on evenly .


4. 把麵糰撖開約0.4公分厚,再鋪上紅糖、肉桂粉、碎核桃和葡萄乾。
    Roll into a 0.4cm thin sheet, then sprinkle brown sugar, cinnamon, chopped walnuts and raisins over.


5. 捲成長條狀,再切成約2公分寬的小圓柱。
   Roll it up be a strip, then cut it be a small cylinder which is ca. 2 cm wide.




6. 放置1小時讓麵糰第二次發酵。(請蓋上保鮮膜)
    Placed dough for 1 hours for the second time fermenting.(cover with a piece of plastic wrap. )



7. 在每一個肉桂捲上抹上蛋黃液。
    Spread the egg yolk evenly on every cinnamon buns.

8. 烤箱預熱到180度,再送進烤箱,約16分鐘。
    Pre-heat oven to 180 degrees, bake for ca.16 mins.


9. 愛吃甜一點的大大,可在上方加上" 糖粉 + 水= 糖霜 "。(水一滴一滴慢慢加)
    If YOU like to eat more sweet, you can put "sugar powder + water = frosting."
  


沒吃完的,可以放在冷凍裡
要食用前,直接放入烤箱中加熱即可。
If you can't finish it, just have to put into the freezer.
You just have to put the cinnamon buns into the oven before the serves.

 今天推薦一家開店有50年之久的義大利餐廳

一進去很有溫馨感的餐廳


我們這一次分別都點了這道前菜-- Gamberoni all’Aglio 
這道菜充滿蒜香味,依海豚小姐了解,
它是放上了蒜香口味的特製醬料,
進烤箱烤出來的美味!!


海豚小姐原本這次要點海鮮義大利麵,
由於老闆看到海豚小姐來自亞洲的臉孔,
所以他為我提供特別的海鮮魚餐點。
因為這家餐廳,主餐很少有海鮮魚類,
或許是因為丹麥的海鮮,
實在需要把"豬公撲滿"給犧牲!!!

[海豚先生下廚去] 丹麥開放式黑麥麵包三明治

黑麥麵包三明治 Smørrebrød


這是一道最傳統的丹麥食物--開放式三明治。
通常麵包都會用很營養黑麥麵包,
上層放上多樣不同的食材,如:魚、肉、蛋、蔬菜...。

It is the traditional Danish open-faced sandwich.
Usually it is made with dark rye bread,
Topped with many different things: fish , meat, eggs, vegetables.

海豚先生是來自丹麥,從他是小海豚時,
父母幫忙攜帶的便當
當然為這最傳統的丹麥開放式三明治了。

Mr. Dolphin come from Denmark,
Since he was a small dolphin,
the parents helped him preparing the lunch...
for sure....it was the traditional Danish open-faced sandwich.

黑麥麵包 rugbrød
炸魚片 Deep-fry fishes
蝦子 shrimps
魚卵 fish eggs
炸豬排 Deep-fry pork
燻秋刀魚 smoked saira
蛋 Boiled eggs
生魚片 smoked sashimi
蕃茄 tomato
炒蛋 fried eggs

[海豚小姐下廚去] 糖醋里肌肉

糖 醋 里 肌 肉 Pineapple Pork with Sweet and Sour Sauce




3-4人份 (It serves 3 to 4)

材  料   Ingredients

 豬里肌肉 Pork Tenderloin - 300g
青 椒 半 個 - 1/2 bell Green Pepper
紅甜椒半個 - 1/2 bell Red Pepper
小黃瓜 1/4條  - 1/4 Cucumber
洋蔥一個 - 1  middle Onion
太白粉水半碗 - 1/2 cup cornstarch water
(一匙太白粉混入四匙水 - 1 tablespoon cornstarch mixed with 4 tablespoons water)
鳳梨罐頭半罐 - 1/2 cup pineapple chunks
油炸的油四碗 - 4 cups oil for deep-frying

調 味 料 Seasoning

糖兩大匙 - 2 big teaspoon sugar
醋三大匙 - 3 big teaspoon Vinegar
蕃茄醬兩大匙 - 2 big teaspoon Ketchup
水半碗 - 1/2 cup water
鳳梨罐頭汁3/4罐 - 3/4 cup juice from the can


醃  料  Preserving Ingredients

鹽 1/4小匙 - 1/4 teaspoon Salt
蛋1/2顆 - 1/2 egg

糖1/4小匙 - 1/4 teaspoon Sugar
醬油1/2小匙 - 1/2 teaspoon Soy Sauce

 
        1. 肉、蔬菜皆切為一口大小。 Cut the meat and the vegetables into bite-sized pieces.
        2. 醃肉1小時。Preserve the meat for 1 hour.
        3. 混合調味料。Mix all the seasoning.
        4. 炸豬肉至金黃色。Deep-fry the pork till turning to gold color.(Don't be too hard.)
        5. 炒蔬菜、水果為2分鐘。Fry the vegetables and pineapple.
        6. 加入混合後的調味料。Add the seasoning.
        7. 加入太白粉水勾芡。Add cornstarch water.
        8. 最後加入豬肉混合均勻即可。Mix the meat with the rest.
